Salmon, Nose to Tail with Silla Bjerrum - Saturday, 28 September 2019
We were honoured in 2019 to have chef, consultant and cookbook author, Silla Bjerrum, original founder of Feng Sushi and now working in innovation in the sushi industry, at The Merchant’s Table, where she performed a demonstration of nose to tail eating with a sustainable salmon. Silla utilised a whole salmon and with great skill dissected and prepared sashimi and sushi for us.
The focus is on the key ingredients and techniques used in Japanese cooking and de-mystifies the making of several types of sushi and sashimi.
